Cream Cheese Cooking and Mixing Kettle — Double-Walled

The cream cheese cooker heats curd without scorching and brings it to a smooth texture. A scraper and a high-speed agitator work together.

In short

A cream cheese cooker is a double-walled stainless kettle that heats curd with salt and stabilizer at 75–90 °C into a smooth, homogeneous cream cheese mass. A scraper arm prevents scorching and a high-speed agitator builds the texture. Volume is typically engineered in the 200–2,000 L range.

About the product

In cream cheese, texture is decided in the cooking-mixing step. If salt and stabilizer are not evenly spread through the curd, the product turns lumpy or grainy; scorching on the bottom spoils the taste.

Steam or hot water circulates in the double wall and heats the mass evenly from the surface. The scraper arm keeps the wall clean while the high-speed agitator homogenizes the mass. If desired, vacuum operation removes air bubbles.

Volume, heating source, agitator type, and discharge method are engineered to your product. Discharge can be prepared to connect by pump to a hot-fill machine.

Who is it for?

  • Dairies making cream cheese or spreadable cheese
  • Plants that want better mixing quality for a smooth texture
  • Investors setting up a cream cheese line
  • Producers who hot-fill or plan to

When is it not suitable?

  • If only products such as lor, pudding, or jam will be cooked, the general cooking kettle is enough.
  • For products with very low fat and additive levels that need no homogenization, a high-speed agitator may not be required.

How it works

  1. 01

    Curd loading

Drained curd is loaded into the kettle.

  2. 02

    Salt and stabilizer addition

Additives are added during slow mixing.

  3. 03

    Heating and homogenizing

    75–85 °C

While the mass heats, the high-speed agitator builds a smooth texture.

  4. 04

    Discharge

The hot mass is pumped to the hot-fill line.

Questions about this product

How does it differ from the general cooking kettle?

The cream cheese cooker adds a high-speed homogenizing agitator next to the scraper, and optional vacuum. The general cooking kettle is mainly for cooking thick products without scorching.

Is vacuum necessary?

No, it is optional. Vacuum removes air bubbles and gives a denser, glossier texture.

Can it connect to a hot-fill machine?

Yes. Discharge is engineered so the mass can be pumped to the hot-fill line.
