Cheese & Kashar Equipment

From coagulation in the vat to cooking-stretching, moulding, cooling, and grating, we supply kashar and white cheese equipment individually or as a line.

How do you choose the right equipment in this category?

Choose cheese and kashar equipment by the milk volume you process daily and the type of cheese you make. For white cheese, the cheese vat ranges from 500 to 10,000 L with a double wall suited to a 30–35 °C renneting temperature, and the curd draining machine handles 500–5,000 kg of curd per batch.

In kashar production the narrowest step sets the line capacity, so match the machines to each other. The hot water stretcher runs at 300–2,000 kg/h with 70–80 °C stretching water; the portioning machine handles 300–1,500 kg/h across a 250 g–11 kg portion range with ±1–2% accuracy. The cooling tunnel is built at 300–2,000 kg/h with 2–6 °C water and a modular length of 6–20 m.

For grating, the machine offers 200–1,500 kg/h and disc options from 2 to 8 mm. All contact surfaces are stainless steel. On the stretcher, PLC control and an optional CIP make cleaning and temperature repeatability easier.

Questions about this product

What size cheese vat should I choose? #

Choose it by the amount of milk you process in one batch. Our cheese vats are built from 500 to 10,000 L with a rectangular or oval body. Because renneting is done at 30–35 °C, the vat has a double wall heated by hot water or steam through the jacket.

How do I size a kashar hot water stretcher? #

Size it by the amount of curd you process per hour and by the other machines in the line. Our stretchers cover 300–2,000 kg/h, and the stretching water is typically 70–80 °C. Matching capacities with the portioning and cooling machines avoids a bottleneck.

Why is kashar cooled in a cooling tunnel? #

Moulded kashar must cool in a controlled and even way after stretching. In the cooling tunnel the cheese moves on a belt and is cooled with 2–6 °C water, and the dwell time is set by belt speed. This cools the moulds consistently without manual handling.
