Cheese & Kashar Equipment

Cooling Tunnel

Cooked kashar must be cooled quickly so it holds its shape in the mould. The tunnel carries the product through cold water at constant speed for even cooling.

In short

A kashar cooling tunnel is a stainless tunnel system that chills hot kashar in the mould at constant speed on a conveyor, using a cold water bath or spray. Cooling water runs at 2–6 °C; tunnel length of 6–20 m and capacity of 300–2,000 kg/h are selected modularly. Belt speed is set by inverter to control dwell time.

About the product

Slowly cooled kashar risks deformation and microbial growth. The cooling tunnel brings the product down to target temperature quickly so the mould shape is retained.

The tunnel has a stainless conveyor, a cold water bath or spray section, a circulation pump, and a filter. Belt speed is adjusted by inverter to set how long the product stays in the tunnel.

Tunnel length is modular and chosen by capacity. A chiller or ice-water connection is engineered according to your facility's infrastructure.

Who is it for?

  • Producers who need to cool cooked kashar quickly so it holds its shape in the mould
  • Plants processing hot-fill products such as kashar, mozzarella, string, or çeçil cheese
  • Operations that want to link the cooling step to the portioning machine by conveyor
  • Dairies that want to connect an existing chiller or ice-water line to a cooling tunnel

When is it not suitable?

  • It is not suitable for operations expecting air cooling; the tunnel works with a cold water bath or spray.
  • If there is no chiller or ice-water infrastructure for the cold water, it must be engineered separately.

How it works

  1. 01

    Entry

Moulds are placed on the belt at the tunnel entrance.

  2. 02

    Cold water cooling

    2–6 °C

Moulds pass through a cold water bath or spray.

  3. 03

    Draining

Water on the product drains off in the drip section.

  4. 04

    Exit

Product is removed from the mould and moves on to packing.

Optional equipment

  • Chiller unit
  • Brine bath
  • Automatic mould unloading
  • Temperature logging

Questions about this product

How is tunnel length determined? #

Length is calculated from capacity, belt speed, and the core temperature the product should reach. The exact size is set in the quote.

Does it cool with water or air? #

The tunnel works with a cold water bath or spray. The suitable method is chosen together based on the product and site conditions.

Can it connect to my existing chiller? #

Yes, if its capacity is sufficient it is engineered to connect to your existing chiller or ice-water line.
