Portioned cheese blocks on a stainless steel tray

Cheese & Kashar Equipment

Kashar Portioning Machine

Portioning makes every mould come out at the same weight, reducing giveaway and complaints. The machine cuts the hot dough from the cooker-stretcher outlet and fills moulds.

In short

A kashar portioning machine is a servo-controlled machine that cuts hot cooked kashar dough to a target weight and fills it into moulds. Portions range from 250 g to 11 kg depending on the mould, with typical accuracy of ±1–2% and capacity of 300–1,500 kg/h. The target weight is set on the touch panel.

About the product

With manual cutting, weight deviation turns directly into lost margin. The portioning machine cuts each portion close to the target weight, reducing waste and overfill beyond the label weight.

Hot dough is carried by a feed screw to a servo-controlled cutter. The target weight is entered on the touch panel; interchangeable mould sets and Teflon-coated surfaces suited to hot dough are used.

Mould size, capacity, and a mould transfer conveyor are engineered to your production flow. The machine can be disassembled and washed.

Who is it for?

  • Producers who want to sell kashar in blocks or moulds at a fixed weight
  • Plants losing margin to weight deviation and giveaway with manual cutting
  • Facilities that want to automate the flow from the cooker-stretcher to the cooling tunnel
  • Dairies that make several portion weights and need to change mould sets

When is it not suitable?

  • It is not designed for cutting uncooked, cold, or hard cheese; it works with hot dough feed.
  • It may not pay back in very small production that is satisfied with manual moulding.
