Cooking Kettle — Double-Wall with Scraper Agitator

The cooking kettle heats the product evenly without sticking to the bottom. A scraper agitator and double wall let thick products be cooked safely.

In short

The cooking kettle is a double-wall kettle with a scraper agitator that cooks thick products such as lor curd, processed cheese, pudding, halva, and jam without sticking to the bottom. It holds 100 to 1,500 L and is heated by steam, electric (thermal oil), or gas-burner thermal oil, in a fixed or tilting body.

Process & Heat Treatment

About the product

With thick products such as lor curd, processed cheese, pudding, halva, jam, and sauces, the biggest risk is burning on the bottom. Even heating decides both flavor and yield.

Steam or thermal oil circulates between the double walls and heats the product evenly from the surface. A scraper agitator with PTFE blades continuously cleans the kettle wall. On the tilting model, a gear mechanism makes discharge easy.

Volume, heating source, tilting mechanism, and agitator speed are engineered to the product you make. A cooling jacket, weighing, or recipe-storing PLC can be added if needed.

Who is it for?

  • Small and mid-size plants making lor curd and processed cheese
  • Food workshops producing desserts, halva, jam, or sauces
  • Cheesemakers doing kashar cooking-stretching on a small scale
  • Producers who want to cook several thick products in one kettle

When is it not suitable?

  • Not suited to high-capacity continuous kashar cooking; a continuous line needs a hot-water cooker-stretcher.
  • Cleaning is manual with the lid open, so it does not fit an automatic CIP washing requirement.

Questions about this product

Should I choose electric or steam? #

If your facility has a steam source, the steam model is usually the better fit. Otherwise an electric or thermal-oil model is chosen.

What does the tilting model provide? #

A gear mechanism tilts the kettle forward, so thick products can be emptied easily without waiting on a bottom valve.

Which products can be cooked? #

Thick-consistency products such as lor curd, processed cheese, pudding, halva, jam, and sauces can be cooked.
